If I understand your notion of “whole field” well, then yes, by placing transparent “sampling” facets anywhere in the volume, you can measure physical quantities.
Be carfeul: pressure is a vectorial quantity, in other words, it depends on the direction, except in equilibrium states.
There are assumptions of equilibrium made when calculating the velocity using the “facet details” window, because facets don’t have certain counters that textures have. When you use directional texures, then you will see the actual velocity of the molecules. The temperature is a conversion of the velocity, so indirectly you can measure that.
